The Recipe: Classic or gluten-free waffles with different toppings

I’m a big fan of pancakes. Now it’s just waffle day, but I’m still thinking about making waffles as often as I can because I bought a double iron this year. This is good, right?

advice? the trick? prescription?

Yes is not it! Pancakes are incredibly tasty and can be eaten all year round. Sweet, nutritious, useless and absolutely luxurious. You can actually put anything on a cake and it will be absolutely delicious.

This year I made waffle rolls. I put cardamom in the batter (which this time was a waffle mix—yes, even us chefs can make life a little easier sometimes) and I made the pastry. Two squares with fine almond paste and cream in between. It can be said that they were successful in the brunch they organized.

Some of the tricks I use for cooking and battering are that I never have butter in my waffle iron and then the waffles don’t get crunchy, and that I use bubbling water when I whisk the mixture together. Here are my recipes, low-carb and traditional, then add a few extras. Go ahead and have fun!

Zazi’s regular waffle mix

Gives about 8 waffles

2 dl milk

1 deciliter of sour cream (sour cream)

1-1.5 dl of bubbling water

3.5 dl fine

2 teaspoons baking powder

75g butter, melted and slightly cooled

Feel free to do the following:

Whisk the milk and sour cream together.

Mix flour and baking powder.

Whisk all ingredients by hand, adding bubbling water until mixture is like thick film milk. Feel free to do this a few hours before baking, and keep it in the fridge. Bake in a hot iron without extra butter. Enjoy instantly with any layer.

Gluten-free cottage cheese waffles

2-3 waffles

250 Kisu

1 tablespoon of fiber peel

pinch of salt

2 eggs

Butter for the waffle iron

Feel free to do the following:

Blend the cottage cheese in a food processor, adding the knife. Add eggs and beat together without mixing for a long time, sprinkle with fiber peel and mix quickly.

Heat a waffle iron and grease.

Press into the mixture and bake until golden. Carefully release from iron and serve immediately with a fine topping.

Various toppings for any waffle mix.

2-3 waffles

Lingonberry Cream with Hazelnut Crumbs

2 dl whipping cream

0.5 dl of raw gooseberry / cranberry jam

1 vanilla cream extract or 1 teaspoon vanilla sugar

0.5-1 dl of hazelnut

0.5 dl sugar

Feel free to do the following:

Melt the sugar in a frying pan until golden, flip the hazelnuts over and pour them onto the parchment paper. Let cool and chop with a heavy knife or mortar. Use the required amount and keep the rest in a container at room temperature.

Lingonberry cream

Beat the cream vigorously with the vanilla, then stir in the required amount of cranberries.

Useful first

2-3 waffles

100gm smoked salmon

1 green onion

1 avocado

1 tablespoon of capers

1 tablespoon lemon juice

Cold pressed olive oil or rapeseed oil

Salt and black pepper

2 handfuls of finely grated light salad

Feel free to do the following:

Cut the pitted salmon and avocado into cubes. Mix with chopped capers and chopped green onions. Season with lemon with a little mild olive oil or cold-pressed rapeseed oil and season with salt and pepper. Place the salad in the bottom of the baked waffle and press into the avocado puree.

Moderate ranked first

2-3 waffles

1 tablespoon butter

1 small leek

250gm mushrooms or other option

1.5 cream

2 tablespoons wheat flour

1 dl sour cream

1 dl of milk

1-1.5 teaspoons of soy

Salt and Pepper

Feel free to do the following:

Finely chop the onions and let them sweat in the butter, add the mushroom slices, raise the heat until they turn brown, add the cream and let it simmer. Turn down the heat. Mix the flour with the milk and pour into the stew. Taste with soy, salt and pepper. Finally add the fresh cream. relish.
